Overview: Our intensely mature raw forest honey is the darkest honey in our selection. This particular honey is harvested from a variety of floral and honeydew sources that are present in the wild forests of Northern Spain. It is wonderfully intense, treacly and has a distinctive woody component to its aroma. Containing honeydew from the mighty oak tree, it is a really robust, strong and persistent honey. Slightly varying in taste, colour and texture from season to season, it is raw, natural and unpasteurized, as nature intended.
Colour: Dark amber with a slightly greenish hue.
Aroma: Floral, intense and persistent aroma with a clear woody component.
Taste: A sweet taste with salty notes and a hint of bitterness.
Harvest Season: Spring.
Floral Source: The sources include Oak, Chestnut, Rubus, Heather, Fabaceae, Cistaceae (Rock Rose) and Lamiaceae (flowering herbs). Expertly harvested by a small scale artisan beekeeper.
Geography: Harvested from the dense forests of Burgos and Soria.
Forest Honey Uses: A wonderful addition to marinades and excellent drizzled over toasted cereal. A teaspoon a day for good measure!
