Overview: Our Raw Heather Honey is a robust complex honey. It offers the aroma fallen leaves in Autumn in addition to wild mushrooms. Delicately foraged from hardy heather plants that decorate the rocky valleys of Northern Spain, this honey excites the taste buds with its salty notes and slightly bitter aftertaste. Lovely on a slice of warm toast or in a bowl of warm porridge, it compliments all culinary delights with its presence. Slightly varying in taste, colour and texture from season to season, it is raw, natural and unpasteurised, as nature intended.
Colour: Light amber.
Aroma: Intense and very persistent aroma of fallen leaves in Autumn and wild Mushrooms.
Taste: A sweet taste with salty notes and a hint of bitterness. Becomes more bitter when crystalised.
Harvest Season: Spring/Summer.
Floral Source: The bees have predominantly foraged on wild Spanish Heather (Erica lusitanica). However, there are other floras present. Expertly harvested by a small scale artisan beekeeper.
Geography: Harvested from the dense forests of Burgos.
Heather Honey Uses: Amazing in warm creamy porridge oats, on warm buttered toast and gives a unique twist to cakes and pastries.
