Honey, Banana & Almond Cake
INGREDIENCEÂ Â
-
125g Self-Raising Flour
-
60g Almonds, ground
-
100g Unsalted Butter
-
75g Light Brown Sugar
-
150g Honey
-
1 Banana, Ripe
-
2 Large Eggs
-
1tsp Cinnamon Powder
-
1tsp Desiccated Coconut
-
Flaked Almonds
METHOD
- Sift the self raising flour into a large bowl and stir in the ground almonds. In a saucepan, heat up the butter, sugar and honey over a low heat till it all dissolves together.Â
- Remove from the heat and allow it to cool properly - you don’t want your eggs to scramble during the next step! Add the melted ingredients to the dry ingredients.
- Beat the eggs together and mash up the banana then add this to the mixture. Beat well till it’s all smooth then mix the cinnamon and coconut in.
- Pour into the prepared tin and bake for 30-35 mins. Remember it will continue to cook once you take it out of the oven. Place it onto a wire rack then cut up and serve.
